Grain-Free Chocolate Chip Blondies
My son has asthma. What does that have to do with Chocolate Chip Blondies? For a kid who loves sweets, they are directly related. We (meaning him also) have discovered that when he eats sugar, he is more likely to have asthma issues at night. Though I know there are all kinds of meds to treat asthma and we have them on hand for emergencies, we have determined that we will fight it naturally as much as we can. Cutting down on sugar along with using essential oils has made it possible for him to do very few inhaler treatments. To his credit he made the "rules" for himself - only one or two sugary treats a week including soda and candy. Hey, as much as I would like him to be a teetotaler, it's a start and better than a couple per day as is normal for many middle-schoolers. For that reason, I am working on finding treats that he will like just as well that are sweetened with honey or maple syrup. Yes, I know that the sugar industry says that sugar is sugar and if he consumes massive amounts of any of it, it will lead to diabetes, etc. But when he is eating one honey-sweetened treat a day versus two or three processed sugar treats, I think I can deal with that. Not only that, our bodies know how to process natural sweeteners much better than sugar or corn syrup. It does take some practice subbing out sugar for liquid sweeteners and I haven't quite mastered it, but this recipe has turned out consistently. The bonus is these are grain-free and perfect for gluten-free people.
- 1 cup smooth almond butter
- 1/2 cup honey
- 2 tsp vanilla
- 1 egg
- 1/4 tsp sea salt, optional (if your almond butter isn't very salty)
- 1/2 tsp baking soda
- 1 cup semi-sweet chocolate chips
- Preheat oven to 350 degrees. Butter an 8" baking pan or cover the bottom with parchment paper.
- Mix together everything but the chocolate chips. Fold in the chocolate chips and bake for 15-20 minutes or until a toothpick comes out clean.
- They will be gooey at first, so cool completely before cutting.
